Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 cup bell peppers (diced)
  • 1 jalapeño (diced)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Diced avocado (for garnish)

Instructions

  1. Sauté onions and garlic in a skillet until slightly browned.
  2. Add ground beef or turkey and cook until browned.
  3. Transfer the mixture to the slow cooker and add the beans, tomatoes, peppers, and spices. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Taste and adjust seasoning before serving.
  6. Serve in bowls topped with fresh cilantro and avocado.

Notes

For a vegetarian version, substitute ground meat with lentils or tempeh. Serve with warm bread or cornbread for the best experience.
