- 1 lb ground beef or turkey
- 1 can black beans
- 1 can kidney beans
- 1 can diced tomatoes
- 1 cup bell peppers (diced)
- 1 jalapeño (diced)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- Salt and pepper to taste
- Fresh cilantro (for garnish)
- Diced avocado (for garnish)
Instructions
- Sauté onions and garlic in a skillet until slightly browned.
- Add ground beef or turkey and cook until browned.
- Transfer the mixture to the slow cooker and add the beans, tomatoes, peppers, and spices. Stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Taste and adjust seasoning before serving.
- Serve in bowls topped with fresh cilantro and avocado.
Notes
For a vegetarian version, substitute ground meat with lentils or tempeh. Serve with warm bread or cornbread for the best experience.
