Ingredients

  • 1 ham hock
  • 1 cup brown or green lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 4 cups low-sodium broth
  • Black pepper to taste
  • Salt to taste
  • Splash of vinegar or lemon juice

Instructions

  1. Prep your ingredients by chopping the onions, carrots, celery, and garlic. Rinse the lentils under cold water.
  2. Heat olive oil in a large pot over medium heat. Sauté the onions, carrots, and celery for about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Introduce the ham hock, lentils, herbs, and broth; bring to a gentle boil.
  5. Reduce heat, cover, and simmer for about 90-120 minutes, or until lentils are tender.
  6. Remove the ham hock, shred the meat, and return it to the pot. Adjust seasoning with salt and pepper.
  7. Serve hot, garnished with parsley.
