- 1 cup brown or green lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cups low-sodium broth
- Black pepper to taste
- Salt to taste
- Splash of vinegar or lemon juice
Instructions
- Prep your ingredients by chopping the onions, carrots, celery, and garlic. Rinse the lentils under cold water.
- Heat olive oil in a large pot over medium heat. Sauté the onions, carrots, and celery for about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Introduce the ham hock, lentils, herbs, and broth; bring to a gentle boil.
- Reduce heat, cover, and simmer for about 90-120 minutes, or until lentils are tender.
- Remove the ham hock, shred the meat, and return it to the pot. Adjust seasoning with salt and pepper.
- Serve hot, garnished with parsley.
