Ingredients

  • 1 cup dried pinto or cannellini beans (or 2 cans of beans)
  • 4 ounces smoked pancetta or sausage (or omit for vegetarian)
  • 1 large onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon sweet paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the beans: If using dried beans, soak overnight. If using canned beans, rinse them.
  2. Sauté the aromatics: Heat olive oil in a large pot, add onions, and sauté until translucent. Add garlic and carrots, cooking for a few more minutes.
  3. Add the meat: Stir in pancetta or sausage and cook until browned.
  4. Combine ingredients: Add soaked or canned beans, herbs, and spices to the pot. Pour in the broth and bring to a simmer.
  5. Simmer and cook: Reduce heat to low, cover, and let simmer for at least an hour. Stir occasionally.
  6. Finishing touches: Adjust seasoning if necessary and stir in fresh parsley before serving.

Notes

Feel free to experiment with additional vegetables like bell peppers or celery, and add a splash of red wine for extra flavor.
