Ingredients

- 1 cup dried pinto or cannellini beans (or 2 cans of beans)
- 4 ounces smoked pancetta or sausage (or omit for vegetarian)
- 1 large onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 teaspoon sweet paprika
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the beans: If using dried beans, soak overnight. If using canned beans, rinse them.
- Sauté the aromatics: Heat olive oil in a large pot, add onions, and sauté until translucent. Add garlic and carrots, cooking for a few more minutes.
- Add the meat: Stir in pancetta or sausage and cook until browned.
- Combine ingredients: Add soaked or canned beans, herbs, and spices to the pot. Pour in the broth and bring to a simmer.
- Simmer and cook: Reduce heat to low, cover, and let simmer for at least an hour. Stir occasionally.
- Finishing touches: Adjust seasoning if necessary and stir in fresh parsley before serving.
Notes
Feel free to experiment with additional vegetables like bell peppers or celery, and add a splash of red wine for extra flavor.
