Ingredients

- 1.5–2 pounds carrots, peeled and chopped
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons olive oil
- 4 cups low-sodium vegetable broth
- 1/2 cup coconut milk (optional)
- Salt and black pepper to taste
- Squeeze of lemon or orange juice
- Fresh herbs (cilantro or parsley) for garnish
- Toasted pumpkin seeds or chopped chives for garnish (optional)
Instructions
- Prep the vegetables: Peel and roughly chop the carrots; dice the onion; mince the garlic; grate the ginger.
- Heat olive oil in a large Dutch oven over medium heat, and sauté the onion with a pinch of salt until soft and golden.
- Add garlic and ginger, sauté for 1 minute until fragrant, then stir in the carrots, cooking for another 3–4 minutes.
- Pour in vegetable broth and bring to a simmer. Reduce heat and cook until carrots are tender, about 20 minutes.
- Use an immersion blender to puree the soup to desired texture, then stir in coconut milk and adjust seasoning with salt and lemon juice.
- Garnish with fresh herbs, a drizzle of olive oil, and toasted seeds or chives if desired.
Notes
For a creamier soup, add coconut milk or an alternative. Adjust seasonings to taste, especially salt and citrus.
