Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing thoroughly after each addition. Follow with the vanilla extract.
  4. In another bowl, combine flour, cocoa powder, baking powder, baking soda, and salt; whisk to combine.
  5. Gradually incorporate the dry mixture into the creamed mix, alternating with the buttermilk until just combined.
  6. Fold in colorful sprinkles, reserving some for topping.
  7. Spoon the batter into cupcake liners, filling them about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow them to cool completely before decorating with frosting and remaining sprinkles.
