Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, and nutmeg.
  5. Gradually fold the dry ingredients into the wet mixture, alternating with milk until just combined.
  6. Pour batter into the muffin tins, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool completely before glazing.
  8. For the glaze, simmer raspberries and water over medium heat until softened.
  9. Press the mixture through a sieve to remove seeds, then mix with powdered sugar until smooth.
  10. Spoon the glaze onto each cupcake, allowing it to drip slightly down the sides to mimic a vampire bite.

For variations, consider using almond or oat milk as a substitute for dairy. Ensure the butter is at room temperature for optimal mixing.
