Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with colorful cupcake liners.
- Cream together the butter and sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, incorporating each before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, alternating with the milk, mixing until just combined.
- Fold in the rainbow sprinkles gently.
- Pour the batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
- For the frosting, beat together the softened butter, powdered sugar, black cocoa powder, and enough milk to achieve a smooth consistency.
- Allow cupcakes to cool completely before frosting them for best results.
