Description

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk (or a dairy-free alternative)
  • ½ cup vegetable oil (coconut oil works too)
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened (or vegan butter)
  • 4 cups powdered sugar
  • ¼ cup milk (or a dairy-free alternative)
  • Food coloring (green, black, and purple for decoration)
  • Edible decorations (candy eyes, gummy worms, colored sprinkles)

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake tins with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix eggs, milk, oil, and vanilla until well combined.
  4. Gradually add wet ingredients to dry ingredients and stir until just combined. Carefully stir in boiling water until smooth.
  5. Pour the batter into lined cupcake tins, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Beat softened butter until creamy. Gradually add powdered sugar and milk, mixing until fluffy.
  9. Divide frosting and tint with food coloring.
  10. Once cupcakes are cool, frost using a piping bag and decorate with candy eyes, gummy worms, and sprinkles.

Notes

Consider chilling the cupcakes for 30 minutes before frosting to help the frosting maintain its shape.
