- ½ cup vegetable oil (coconut oil works too)
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened (or vegan butter)
- 4 cups powdered sugar
- ¼ cup milk (or a dairy-free alternative)
- Food coloring (green, black, and purple for decoration)
- Edible decorations (candy eyes, gummy worms, colored sprinkles)
Instructions
- Preheat oven to 350°F (175°C) and line cupcake tins with liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, mix eggs, milk, oil, and vanilla until well combined.
- Gradually add wet ingredients to dry ingredients and stir until just combined. Carefully stir in boiling water until smooth.
- Pour the batter into lined cupcake tins, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Beat softened butter until creamy. Gradually add powdered sugar and milk, mixing until fluffy.
- Divide frosting and tint with food coloring.
- Once cupcakes are cool, frost using a piping bag and decorate with candy eyes, gummy worms, and sprinkles.
Notes
Consider chilling the cupcakes for 30 minutes before frosting to help the frosting maintain its shape.
