Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 24 tbsp heavy cream
  • Food coloring (neon colors of your choice)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, combine flour, baking powder, and salt; set aside.
  3. In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Incorporate eggs one at a time, followed by adding the vanilla extract, mixing well until blended.
  5. Gradually mix in the dry ingredients, alternating with milk. Start and end with the flour mixture. Beat just until combined.
  6. Divide the batter evenly into the prepared liners, filling about 2/3 full.
  7. Place in the oven for 18-20 minutes or until a toothpick inserted comes out clean. Allow cupcakes to cool completely on a wire rack.
  8. In a bowl, beat softened butter with powdered sugar until blended. Add heavy cream and vanilla extract, beating until light and fluffy.
  9. Divide frosting into separate bowls and mix in your chosen food colors until you achieve the vibrancy you desire.
  10. Using a piping bag, swirl the neon frosting onto cooled cupcakes.

Notes

Store leftovers in an airtight container at room temperature for up to three days; refrigerate for longer storage or freeze for up to three months.
