A quick and flavorful Ground Turkey Teriyaki Stir Fry that balances sweet, salty, and umami flavors, perfect for busy weeknights.

- 1 lb ground turkey (93/7 or 85/15)
- 3 tbsp soy sauce (or tamari for gluten-free)
- 2 tbsp mirin or rice vinegar
- 2 tbsp brown sugar or honey
- 2 cloves fresh garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
- 2 cups mixed vegetables (bell peppers, snap peas, carrots, scallions, shiitake or cremini mushrooms)
- 1 tbsp cornstarch + 2 tbsp cold water (for thickening)
- Red pepper flakes or sriracha (optional)
- Toasted sesame seeds (for garnish)
Instructions
- Prepare all ingredients by chopping vegetables into uniform bites.
- Combine soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil in a bowl; set aside.
- Heat a large skillet or wok over medium-high heat, add oil and brown the turkey.
- Push turkey to the side, add carrots, and tough vegetables; stir-fry for a couple of minutes, then add mushrooms and peppers.
- Add turkey back, pour in teriyaki sauce, and stir to combine; if desired, stir in cornstarch slurry to thicken.
- Finish with scallions and sesame oil; serve over rice or noodles, garnished with sesame seeds.
Notes
Control heat and timing to avoid overcooking; serve with steamed rice or noodles and pickled vegetables for contrast.
