Instructions
- Heat olive oil in a large non-stick skillet over medium heat. Add diced onion and bell pepper; sauté for 3-5 minutes until softened.
- Add ground beef to the skillet, breaking it apart. Season with salt and pepper, and cook until browned (5-7 minutes).
- While the beef cooks, crack eggs into a bowl and whisk with milk, salt, and pepper.
- Once the beef is cooked, push it to one side and pour the egg mixture into the cleared area.
- Gently stir the eggs as they set, folding them into the beef mixture for soft curds.
- Cook until eggs reach desired consistency; remove from heat and fold in fresh herbs.
- Serve immediately with crusty bread or warm tortillas.
