Description

Ingredients

  • 1 pound ground beef (or turkey/chicken)
  • 4 large eggs
  • 1 medium onion, diced
  • 1 bell pepper, chopped
  • 12 garlic cloves, minced
  • Salt and pepper to taste
  • A splash of milk or cream (optional)
  • Fresh herbs like parsley or chives, finely chopped (optional)

Instructions

  1. Heat olive oil in a large non-stick skillet over medium heat. Add diced onion and bell pepper; sauté for 3-5 minutes until softened.
  2. Add ground beef to the skillet, breaking it apart. Season with salt and pepper, and cook until browned (5-7 minutes).
  3. While the beef cooks, crack eggs into a bowl and whisk with milk, salt, and pepper.
  4. Once the beef is cooked, push it to one side and pour the egg mixture into the cleared area.
  5. Gently stir the eggs as they set, folding them into the beef mixture for soft curds.
  6. Cook until eggs reach desired consistency; remove from heat and fold in fresh herbs.
  7. Serve immediately with crusty bread or warm tortillas.
