Ingredients

- 1 lb lean ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 medium russet potatoes, sliced
- 1 can cream of mushroom soup
- 2 cups shredded cheese (cheddar or pepper jack)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat and add onions, garlic, and bell peppers. Cook until onions are translucent.
- Stir in the cream of mushroom soup and season with herbs, salt, and pepper.
- Grease a 9×13-inch baking dish and layer half of the sliced potatoes, followed by half of the beef mixture. Repeat the layers.
- Sprinkle cheese over the top layer.
- Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it rest for 10 minutes before serving.
