Description

A comforting layered casserole of ground beef, potatoes, and cheese, perfect for family gatherings.


Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 medium russet potatoes, sliced
  • 1 can cream of mushroom soup
  • 2 cups shredded cheese (cheddar or pepper jack)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat and add onions, garlic, and bell peppers. Cook until onions are translucent.
  3. Stir in the cream of mushroom soup and season with herbs, salt, and pepper.
  4. Grease a 9×13-inch baking dish and layer half of the sliced potatoes, followed by half of the beef mixture. Repeat the layers.
  5. Sprinkle cheese over the top layer.
  6. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  7. Let it rest for 10 minutes before serving.
