- 1 pound cremini or baby bella mushrooms, sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cloves fresh garlic, minced
- 1 small shallot, minced
- 1 cup mixed fresh herbs (parsley, basil, chives), chopped
- 1/2 cup olive oil (for herb oil)
- 1 tablespoon lemon juice
- Sea salt and cracked pepper to taste
- Microgreens or small herb sprigs for garnish
Instructions
- Prep the ingredients: clean and slice the mushrooms, mince the garlic and shallot, and chop the herbs.
- Heat a skillet over medium-high heat and add olive oil. Sear the mushrooms in a single layer, browning for 2–3 minutes without stirring.
- Toss the mushrooms and continue browning until evenly colored; add more oil if necessary.
- Reduce heat, add butter, garlic, and shallot, sautéing until fragrant, about 30–60 seconds.
- Blend olive oil with parsley and chives until smooth to make the herb oil.
- Deglaze the pan with lemon juice, season with salt and pepper, then spoon the mixture into small glasses.
- Drizzle with herb oil and garnish with microgreens before serving warm.
