Ingredients

  • 4 cups fresh or frozen green beans
  • 8 oz cremini or button mushrooms, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup fried onions
  • Salt and pepper to taste
  • 2 tbsp butter for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans in boiling water for 3 minutes, then transfer to an ice bath.
  3. In a skillet, melt butter over medium heat and sauté the sliced mushrooms until golden brown.
  4. In a large bowl, combine the sautéed mushrooms, blanched green beans, cream of mushroom soup, and milk. Season with salt and pepper.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Spread fried onions generously on top.
  7. Bake for about 25-30 minutes, until bubbly and onions are golden brown.
  8. Serve warm and enjoy!

Notes

For a vegan version, substitute regular milk with coconut milk and use plant-based mushroom soup.
