Ingredients

- 4 cups fresh or frozen green beans
- 8 oz cremini or button mushrooms, sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 cup fried onions
- Salt and pepper to taste
- 2 tbsp butter for sautéing
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch the green beans in boiling water for 3 minutes, then transfer to an ice bath.
- In a skillet, melt butter over medium heat and sauté the sliced mushrooms until golden brown.
- In a large bowl, combine the sautéed mushrooms, blanched green beans, cream of mushroom soup, and milk. Season with salt and pepper.
- Pour the mixture into a greased 9×13 inch baking dish.
- Spread fried onions generously on top.
- Bake for about 25-30 minutes, until bubbly and onions are golden brown.
- Serve warm and enjoy!
Notes
For a vegan version, substitute regular milk with coconut milk and use plant-based mushroom soup.
