- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 2 carrots, diced
- 1 bell pepper, diced
- 2 cups fresh spinach or kale
- 1 can (15 oz) chickpeas or tofu, diced
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until onions are translucent, about 5 minutes.
- Add curry powder and toast for about 1 minute.
- Gradually pour in coconut milk and vegetable broth, stirring to combine.
- Add diced carrots and bell peppers, bringing the pot to a gentle simmer.
- Introduce chickpeas, tofu, or cooked meat, allowing to simmer for about 10-15 minutes until vegetables are tender.
- Before serving, add fresh spinach or kale and let it wilt.
- Taste and adjust seasoning with lime juice or salt.
- Ladle soup into bowls and garnish with fresh cilantro or green onions. Serve with a squeeze of lime on top.
Notes
For a lighter option, substitute coconut milk with almond milk or vegetable broth. Use dried garlic if fresh is unavailable.
