  • 1 can (15 oz) chickpeas or tofu, diced

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until onions are translucent, about 5 minutes.
  2. Add curry powder and toast for about 1 minute.
  3. Gradually pour in coconut milk and vegetable broth, stirring to combine.
  4. Add diced carrots and bell peppers, bringing the pot to a gentle simmer.
  5. Introduce chickpeas, tofu, or cooked meat, allowing to simmer for about 10-15 minutes until vegetables are tender.
  6. Before serving, add fresh spinach or kale and let it wilt.
  7. Taste and adjust seasoning with lime juice or salt.
  8. Ladle soup into bowls and garnish with fresh cilantro or green onions. Serve with a squeeze of lime on top.

Notes
