Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and spices.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the molasses and egg, mixing well until combined.
- Gradually incorporate the flour mixture until a soft dough forms.
- Chill the dough for about 30 minutes.
- Roll the dough into small balls, then roll in granulated sugar followed by powdered sugar.
- Place the dough balls on lined baking sheets, ensuring space for spreading. Bake for 10-12 minutes.
- Let them cool for a few minutes on the baking sheet before transferring to wire racks.
- Once cooled, spread cream cheese frosting between two cookies and sandwich them together.
Notes
For a unique twist, consider adding cayenne pepper or espresso powder to the dough.
