- 4–6 lbs Prime Rib Roast
- 5–6 cloves Garlic, minced
- Fresh Herbs (rosemary, thyme, parsley), chopped
- Olive Oil (quality extra virgin)
- Salt (to taste)
- Black Pepper (to taste)
- Red Wine or Beef Broth (for gravy)
Instructions
- Preheat your oven to 450°F (232°C).
- Place your prime rib on a roasting rack.
- In a bowl, mix minced garlic, chopped fresh herbs, olive oil, salt, and black pepper to create a paste.
- Generously coat the entire roast with the herb mixture.
- Roast for 15 minutes at high heat to develop a crust, then lower the temperature to 325°F (163°C) and cook until the internal temperature reaches 135°F (57°C) for medium-rare.
- Let the meat rest for at least 20 minutes before slicing.
- Serve with savory gravy or horseradish sauce.
Notes
Resting the meat is key for the best texture. An herb crust can be prepared a day ahead for deeper flavor.
