  • 56 cloves Garlic, minced
  • Fresh Herbs (rosemary, thyme, parsley), chopped
  • Olive Oil (quality extra virgin)
  • Salt (to taste)
  • Black Pepper (to taste)
  • Red Wine or Beef Broth (for gravy)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Place your prime rib on a roasting rack.
  3. In a bowl, mix minced garlic, chopped fresh herbs, olive oil, salt, and black pepper to create a paste.
  4. Generously coat the entire roast with the herb mixture.
  5. Roast for 15 minutes at high heat to develop a crust, then lower the temperature to 325°F (163°C) and cook until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Let the meat rest for at least 20 minutes before slicing.
  7. Serve with savory gravy or horseradish sauce.

Notes

Resting the meat is key for the best texture. An herb crust can be prepared a day ahead for deeper flavor.
