- 4 chicken thighs or breasts
- 4 cloves of garlic, minced
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 pound baby potatoes, halved
- 1 pound green beans, trimmed
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the chicken marinade by combining garlic, rosemary, thyme, lemon zest, lemon juice, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- Toss the potatoes in olive oil, salt, and pepper, then spread on a baking sheet.
- Bake the potatoes for 20 minutes.
- Add marinated chicken to the baking sheet and roast for another 25-30 minutes until chicken reaches 165°F.
- In a skillet, sauté green beans in olive oil over medium heat for 5-7 minutes until tender-crisp.
- Serve hot, garnishing with fresh herbs if desired.
Notes
Ensure potatoes are cut uniformly and spaced well on the baking sheet for even roasting.
