Description

A comforting dish of succulent chicken marinated in garlic and herbs, paired with crispy potatoes and sautéed green beans.


Ingredients

  • 4 chicken thighs or breasts
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the chicken marinade by combining garlic, rosemary, thyme, lemon zest, lemon juice, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  3. Toss the potatoes in olive oil, salt, and pepper, then spread on a baking sheet.
  4. Bake the potatoes for 20 minutes.
  5. Add marinated chicken to the baking sheet and roast for another 25-30 minutes until chicken reaches 165°F.
  6. In a skillet, sauté green beans in olive oil over medium heat for 5-7 minutes until tender-crisp.
  7. Serve hot, garnishing with fresh herbs if desired.

Notes

Ensure potatoes are cut uniformly and spaced well on the baking sheet for even roasting.
