Garlic Butter Steak Bites and Potatoes

Description

A comforting dish featuring savory steak bites seared to perfection and tossed with garlic butter and roasted potatoes.


Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 lb baby Yukon Gold potatoes, halved or quartered
  • 3 tbsp unsalted butter
  • 4 garlic cloves, smashed
  • 1 tbsp fresh thyme (or rosemary)
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Smoked paprika, to taste
  • Lemon juice, to taste
  • Chopped parsley, for garnish

Instructions

  1. Dry the steak cubes with paper towels and season generously with salt and pepper.
  2. In a large skillet, heat 1 tbsp of olive oil over medium-high heat and add the potatoes. Sauté until browned and tender, about 12–15 minutes. Remove and keep warm.
  3. Return the skillet to high heat, add another tbsp of olive oil, and sear the steak in a single layer for 2–3 minutes per side for medium-rare. Work in batches if needed.
  4. Reduce heat to medium, push the steak to the side, add butter, garlic, and thyme. Spoon the melted garlic butter over the steak for 1–2 minutes.
  5. Add the potatoes back to the skillet, toss to combine, and let mingle for 1 minute before serving. Finish with a squeeze of lemon juice and chopped parsley.

Notes

Dry the steak well before searing to avoid steaming. Use a heavy skillet for the best crust.
