Description

Delightful sweet bites with a buttery rum flavor and a crunchy toffee texture, topped with a creamy frosting.


Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup toffee bits
  • 1 tsp rum extract
  • 1 cup powdered sugar
  • Milk as needed for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add rum extract and mix well.
  4. In a separate bowl, whisk together flour and a pinch of salt, then gradually add to the wet mixture.
  5. Fold in toffee bits evenly.
  6. Scoop rounded portions of dough onto the baking sheet, spacing 2 inches apart, and bake for 10-12 minutes until edges are golden.
  7. Let cool briefly, then transfer to a wire rack to cool completely.
  8. Make frosting by mixing powdered sugar with butter and milk to desired consistency, then drizzle over cooled bites.
  9. Enjoy fresh, or store in an airtight container for up to 5 days.
