- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup toffee bits
- 1 tsp rum extract
- 1 cup powdered sugar
- Milk as needed for frosting
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add rum extract and mix well.
- In a separate bowl, whisk together flour and a pinch of salt, then gradually add to the wet mixture.
- Fold in toffee bits evenly.
- Scoop rounded portions of dough onto the baking sheet, spacing 2 inches apart, and bake for 10-12 minutes until edges are golden.
- Let cool briefly, then transfer to a wire rack to cool completely.
- Make frosting by mixing powdered sugar with butter and milk to desired consistency, then drizzle over cooled bites.
- Enjoy fresh, or store in an airtight container for up to 5 days.
