Description

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 2 large yellow onions
  • 8 oz cremini or button mushrooms
  • 1 cup Gruyère cheese, shredded
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 bay leaf
  • 2 tbsp butter
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing onions, slicing mushrooms, chopping herbs, and cutting chicken into bite-sized pieces.
  2. In a large skillet, melt butter over medium heat, add onions and a pinch of salt, and caramelize for 20-25 minutes.
  3. Once caramelized, add mushrooms and cook until browned.
  4. Add chicken, season with salt, pepper, and herbs, and cook until browned, about 7-10 minutes.
  5. Stir in rice, pour in chicken broth, and bring to a gentle boil.
  6. Transfer the mixture to a greased baking dish and sprinkle with cheese.
  7. Bake in a preheated oven at 350°F (175°C) for 25 minutes, or until cheese is bubbly and golden brown, broiling for a few extra minutes if desired.
  8. Let it rest before serving, then garnish with fresh herbs.
