- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 2 large yellow onions
- 8 oz cremini or button mushrooms
- 1 cup Gruyère cheese, shredded
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 1 bay leaf
- 2 tbsp butter
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Prep your ingredients by dicing onions, slicing mushrooms, chopping herbs, and cutting chicken into bite-sized pieces.
- In a large skillet, melt butter over medium heat, add onions and a pinch of salt, and caramelize for 20-25 minutes.
- Once caramelized, add mushrooms and cook until browned.
- Add chicken, season with salt, pepper, and herbs, and cook until browned, about 7-10 minutes.
- Stir in rice, pour in chicken broth, and bring to a gentle boil.
- Transfer the mixture to a greased baking dish and sprinkle with cheese.
- Bake in a preheated oven at 350°F (175°C) for 25 minutes, or until cheese is bubbly and golden brown, broiling for a few extra minutes if desired.
- Let it rest before serving, then garnish with fresh herbs.
Notes
Feel free to experiment with different vegetables or cheeses. For a healthier version, consider adding spinach or using cauliflower rice.
