Deliciously flaky biscuit bombs filled with tender, slow-cooked beef and served with savory broth for dipping.
Ingredients
- Beef roast (or leftover roast beef)
- Beef broth
- Onion
- Garlic
- Fresh herbs (like thyme and rosemary)
- Worcestershire sauce
- Mushrooms (Cremini or shiitake)
- All-purpose flour
- Baking powder
- Salt
- Butter (cold and cubed)
- Milk or buttermilk
Instructions
- In a slow cooker, add beef roast, sliced onion, minced garlic, mushrooms, herbs, Worcestershire sauce, and beef broth. Cover and cook on low for 6-8 hours or until tender.
- Shred the beef and stir to combine with the juices.
- Preheat your oven to 425°F (220°C).
- In a large bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until the dough forms. Be careful not to overmix!
- Roll out the dough onto a floured surface until about ½ inch thick and cut into circles (about 4 inches in diameter).
- Place a spoonful of beef mixture in the center of each circle and fold the dough to enclose the filling. Place seam side down on a parchment-lined baking sheet.
- Bake for 15-20 minutes or until golden brown. Let cool slightly before serving with warm beef broth for dipping.
Notes
Ensure not to overfill the bombs; around 2 tablespoons of meat filling should suffice. Brush the tops with melted butter before baking for an extra crispy finish.
