Description

Deliciously flaky biscuit bombs filled with tender, slow-cooked beef and served with savory broth for dipping.


Ingredients

  • Beef roast (or leftover roast beef)
  • Beef broth
  • Onion
  • Garlic
  • Fresh herbs (like thyme and rosemary)
  • Worcestershire sauce
  • Mushrooms (Cremini or shiitake)
  • All-purpose flour
  • Baking powder
  • Salt
  • Butter (cold and cubed)
  • Milk or buttermilk

Instructions

  1. In a slow cooker, add beef roast, sliced onion, minced garlic, mushrooms, herbs, Worcestershire sauce, and beef broth. Cover and cook on low for 6-8 hours or until tender.
  2. Shred the beef and stir to combine with the juices.
  3. Preheat your oven to 425°F (220°C).
  4. In a large bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  5. Stir in the milk until the dough forms. Be careful not to overmix!
  6. Roll out the dough onto a floured surface until about ½ inch thick and cut into circles (about 4 inches in diameter).
  7. Place a spoonful of beef mixture in the center of each circle and fold the dough to enclose the filling. Place seam side down on a parchment-lined baking sheet.
  8. Bake for 15-20 minutes or until golden brown. Let cool slightly before serving with warm beef broth for dipping.

Notes

Ensure not to overfill the bombs; around 2 tablespoons of meat filling should suffice. Brush the tops with melted butter before baking for an extra crispy finish.
