Description

A nostalgic Fig Wedding Cake with soft spices and flavorful figs, perfect for family gatherings and celebrations.


Ingredients

  • 2 cups fresh or dried figs, chopped
  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar (or coconut sugar)
  • 3 large eggs (or flax eggs for vegan)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cardamom (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking pans with parchment paper.
  2. Cream together the butter and brown sugar until light and fluffy, about 4-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Sift together the flour, baking powder, baking soda, and spices in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the figs.
  6. Fold in the figs gently with a spatula.
  7. Pour the batter into the prepared pans and spread it evenly.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Soaking dried figs in warm water or rum for 30 minutes can add moisture and flavor.
