Description

A delightful combination of toasted nuts and buttery caramel that creates a perfect balance of sweet and salty flavors, perfect for the holiday season.


Ingredients

  • 1 cup almonds, toasted
  • 1 cup walnuts, toasted
  • 1 cup pecans, toasted
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Toast the nuts and seeds in a skillet over medium heat for about 5 minutes until fragrant.
  3. In a saucepan, combine sugar, corn syrup, and butter. Cook over medium-low heat, stirring until melted and gently boiling.
  4. Once boiling, stop stirring and boil for about 5 minutes until it turns an amber color. Remove from heat and mix in vanilla extract and a pinch of salt.
  5. Quickly fold in the toasted nuts and seeds until coated in caramel. Pour onto the prepared baking sheet.
  6. Spread into an even layer and allow to cool completely.
  7. Break into shards and store in an airtight container.

Notes

Using a candy thermometer helps achieve the perfect ‘hard crack’ stage for brittle. Be cautious with the sugar temperature to prevent burning.
