- 2 cups mini marshmallows
- 1 cup granulated sugar
- 1 cup corn syrup
- 4 tablespoons unsalted butter
- 1 cup mixed roasted nuts (almonds, walnuts, pecans)
- 1 teaspoon vanilla extract
- 3 cups Rice Krispies
Instructions
- Line an 8-inch square baking dish with parchment paper, leaving an overhang for easy lifting.
- In a large saucepan, combine granulated sugar, a hint of water, and corn syrup over medium heat. Stir until the sugar dissolves completely.
- Allow it to boil without stirring for about 5–7 minutes, until it reaches the soft-ball stage (235°F to 240°F).
- Remove from heat and stir in the mini marshmallows, butter, and vanilla extract until melted and creamy.
- Gently fold in the nuts and Rice Krispies until well-coated.
- Pour the mixture into the prepared dish, pressing evenly down with a lightly greased spatula.
- Let cool at room temperature for about 2 hours; once set, lift out and cut into squares or rectangles.
Notes
Store in an airtight container at room temperature for up to a week. For best texture, ensure bars are completely cooled before storing.
