Ingredients

- 1/4 cup butter
- 1/4 cup granulated sugar or coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp espresso powder
- 1/2 cup nuts (pecans, walnuts, or almonds)
- Cocoa powder for rolling
- Flaky sea salt for topping
Instructions
- In a double boiler, melt the chocolate and butter together, stirring continuously until smooth and glossy.
- Remove from heat and blend in the sugar until fully combined.
- Add the vanilla extract and espresso powder, stirring evenly.
- If using, fold in nuts gently.
- Line a baking sheet with parchment paper, and form the chocolate mixture into balls.
- Roll each ball in cocoa powder or sprinkle with sea salt.
- Chill in the refrigerator for at least 60 minutes before serving.
- Store in an airtight container for up to a week.
