Description

A delightful banana nut bread with rich flavors from overripe bananas, toasted walnuts, and warm spices, perfect for any gathering.


Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. In the bowl with mashed bananas, add melted butter, sugar, eggs, and vanilla extract. Stir until fully combined.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into a greased 9×5 inch loaf pan and bake for 60-70 minutes until golden and a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a twist, try folding in chocolate chips or dried fruit. Ensure bananas are overripe for maximum sweetness.
