Description

A warm and comforting banana nut bread made with overripe bananas and crunchy nuts for an extra moist texture.


Ingredients

  • 3 ripe bananas, overripe
  • 1 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 large eggs
  • ⅓ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Stir in the melted unsalted butter while the bananas are still warm. Add the vanilla extract and eggs, whisking until combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Gently fold the dry ingredients into the wet banana mixture until just combined.
  6. Fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and sprinkle extra nuts on top if desired.
  8. Bake for 60-70 minutes until golden brown and a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
  10. Slice and enjoy warm or at room temperature.

Using overripe bananas is essential for moisture and sweetness. Avoid overmixing to prevent a dense texture.
