- 3 ripe bananas, overripe
- 1 ½ cups all-purpose flour
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 2 large eggs
- ⅓ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon (optional)
- 1 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Stir in the melted unsalted butter while the bananas are still warm. Add the vanilla extract and eggs, whisking until combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gently fold the dry ingredients into the wet banana mixture until just combined.
- Fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and sprinkle extra nuts on top if desired.
- Bake for 60-70 minutes until golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy warm or at room temperature.
