- 2 cups chopped fresh broccoli
- 1 diced onion
- 3 minced garlic cloves
- 2 diced carrots
- 1 chopped potato (Yukon Gold recommended)
- 4 cups vegetable broth
- 1/2 cup soaked cashews or 1/4 cup nutritional yeast
- Salt and black pepper, to taste
- Smoked paprika or fresh thyme, optional
Instructions
- Sauté diced onion and minced garlic in a large pot over medium heat until translucent.
- Add chopped broccoli, diced carrots, chopped potato, vegetable broth, salt, pepper, and spices.
- Bring to a gentle boil, then reduce to a simmer and cover. Cook for about 20 minutes until vegetables are tender.
- Remove from heat and stir in soaked cashews or nutritional yeast.
- Blend the soup until smooth, then return to the pot and adjust texture with more vegetable broth if needed.
- Taste and adjust seasoning as necessary. Serve hot with toppings like nutritional yeast, olive oil, or pumpkin seeds.
Notes
For a nut-free option, substitute cashews with sunflower seeds. Enjoy with crusty bread or a salad.
