A heartwarming vegan soup with rich flavors of broccoli, cashews, and nutritional yeast for a cheesy twist.


Ingredients

  • 2 cups chopped fresh broccoli
  • 1 diced onion
  • 3 minced garlic cloves
  • 2 diced carrots
  • 1 chopped potato (Yukon Gold recommended)
  • 4 cups vegetable broth
  • 1/2 cup soaked cashews or 1/4 cup nutritional yeast
  • Salt and black pepper, to taste
  • Smoked paprika or fresh thyme, optional

Instructions

  1. Sauté diced onion and minced garlic in a large pot over medium heat until translucent.
  2. Add chopped broccoli, diced carrots, chopped potato, vegetable broth, salt, pepper, and spices.
  3. Bring to a gentle boil, then reduce to a simmer and cover. Cook for about 20 minutes until vegetables are tender.
  4. Remove from heat and stir in soaked cashews or nutritional yeast.
  5. Blend the soup until smooth, then return to the pot and adjust texture with more vegetable broth if needed.
  6. Taste and adjust seasoning as necessary. Serve hot with toppings like nutritional yeast, olive oil, or pumpkin seeds.

Notes

For a nut-free option, substitute cashews with sunflower seeds. Enjoy with crusty bread or a salad.
