- 8 oz short pasta (fusilli or penne)
- 1 can (5 oz) high-quality olive oil-packed tuna, drained
- 1 red bell pepper, chopped
- 1/4 cup red onion, chopped
- 1/4 cup olives, sliced
- 1/4 cup fresh basil, minced
- 1/4 cup fresh parsley, minced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a rolling boil, then add pasta and cook according to package directions until al dente, about 8-10 minutes.
- While the pasta cooks, chop bell peppers, onion, and olives, and mince the herbs.
- In a bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Drain the cooked pasta and rinse under cold water to stop cooking.
- In a large bowl, combine pasta, tuna, chopped vegetables, herbs, and dressing.
- Toss gently to coat everything in the dressing. Taste and adjust flavors as necessary.
- Let the salad sit for about 30 minutes before serving to allow flavors to meld.
Notes
For a creamier texture, substitute yogurt or sour cream in the dressing. Feel free to add sun-dried tomatoes or a sprinkle of chili flakes for added flavor.
