Ingredients

  • 8 oz short pasta (fusilli or penne)
  • 1 can (5 oz) high-quality olive oil-packed tuna, drained
  • 1 red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup olives, sliced
  • 1/4 cup fresh basil, minced
  • 1/4 cup fresh parsley, minced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a rolling boil, then add pasta and cook according to package directions until al dente, about 8-10 minutes.
  2. While the pasta cooks, chop bell peppers, onion, and olives, and mince the herbs.
  3. In a bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  4. Drain the cooked pasta and rinse under cold water to stop cooking.
  5. In a large bowl, combine pasta, tuna, chopped vegetables, herbs, and dressing.
  6. Toss gently to coat everything in the dressing. Taste and adjust flavors as necessary.
  7. Let the salad sit for about 30 minutes before serving to allow flavors to meld.

Notes

For a creamier texture, substitute yogurt or sour cream in the dressing. Feel free to add sun-dried tomatoes or a sprinkle of chili flakes for added flavor.
