Ingredients

  • 1 lb chicken breast or thighs, sliced
  • 1 cup raw or roasted cashews
  • 1 cup bell peppers (red, yellow, or green), sliced
  • 1 cup snow peas or sugar snap peas
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil for stir-frying
  • Optional: chili sauce for heat
  • Optional: sliced scallions for garnish

Instructions

  1. Marinate sliced chicken in soy sauce and cornstarch for 15 minutes.
  2. Wash and slice vegetables while chicken marinates.
  3. Heat sesame oil in a skillet or wok over medium-high heat.
  4. Add marinated chicken and cook for 4-5 minutes until golden brown. Remove and set aside.
  5. In the same skillet, sauté garlic and ginger, then add sliced vegetables. Cook for 3-4 minutes until tender-crisp.
  6. Return chicken to skillet, add cashews, soy sauce, and honey. Stir well to combine.
  7. Serve hot over jasmine rice or noodles, garnished with sliced scallions.
