Description

A comforting and flavorful dish that brings families together, featuring seasoned meat, rice, cheese, and a medley of vegetables.


Ingredients

  • 1 lb ground beef or turkey
  • 2 cups cooked jasmine or basmati rice
  • 1 can black beans, drained
  • 1 cup shredded cheese
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can diced tomatoes with juices
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, avocado, and lime for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until soft, about 5 minutes.
  3. Add the ground meat, season with salt, pepper, cumin, and chili powder. Cook until browned.
  4. Stir in cooked rice, drained beans, and diced tomatoes. Allow to simmer for a few minutes.
  5. Transfer the mixture to a greased casserole dish, spread evenly, and top with shredded cheese.
  6. Cover with foil and bake for 20-25 minutes. Remove foil in the last 10 minutes to let the cheese brown.
  7. Let the casserole sit for a few minutes before garnishing with cilantro, avocado, and lime.

Notes

Feel free to add other vegetables like zucchini or corn, and substitute with plant-based meat or nut cheese as desired.
