- 1 lb ground beef or turkey
- 2 cups cooked jasmine or basmati rice
- 1 can black beans, drained
- 1 cup shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 can diced tomatoes with juices
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, avocado, and lime for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until soft, about 5 minutes.
- Add the ground meat, season with salt, pepper, cumin, and chili powder. Cook until browned.
- Stir in cooked rice, drained beans, and diced tomatoes. Allow to simmer for a few minutes.
- Transfer the mixture to a greased casserole dish, spread evenly, and top with shredded cheese.
- Cover with foil and bake for 20-25 minutes. Remove foil in the last 10 minutes to let the cheese brown.
- Let the casserole sit for a few minutes before garnishing with cilantro, avocado, and lime.
Notes
Feel free to add other vegetables like zucchini or corn, and substitute with plant-based meat or nut cheese as desired.
