Ingredients

  • 1 lb ground meat (beef, pork, or turkey)
  • 1 cup breadcrumbs (ideally sourdough)
  • 1 egg
  • 1/2 cup diced onions
  • 2 cloves minced garlic
  • 1/2 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup bell peppers (diced)
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine ground meat, breadcrumbs, diced onions, minced garlic, egg, salt, and pepper. Mix until just combined.
  3. Form the mixture into bite-sized meatballs and place on a baking sheet.
  4. Bake for 20 to 25 minutes until golden brown and cooked through.
  5. While the meatballs are baking, prepare the sauce by simmering soy sauce, apple cider vinegar, brown sugar, and ketchup in a saucepan.
  6. Combine the cooked meatballs and pineapple with the sauce in a skillet. Simmer for an additional 5-10 minutes.
  7. Garnish with fresh herbs before serving.

Notes

For a lighter version, ground chicken or plant-based meat can be used. Pair with rice or serve as an appetizer.
