- 1 lb ground meat (beef, pork, or turkey)
- 1 cup breadcrumbs (ideally sourdough)
- 1 egg
- 1/2 cup diced onions
- 2 cloves minced garlic
- 1/2 cup soy sauce
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 cup pineapple chunks (fresh or canned)
- 1 cup bell peppers (diced)
- Salt and pepper to taste
- Fresh parsley or green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine ground meat, breadcrumbs, diced onions, minced garlic, egg, salt, and pepper. Mix until just combined.
- Form the mixture into bite-sized meatballs and place on a baking sheet.
- Bake for 20 to 25 minutes until golden brown and cooked through.
- While the meatballs are baking, prepare the sauce by simmering soy sauce, apple cider vinegar, brown sugar, and ketchup in a saucepan.
- Combine the cooked meatballs and pineapple with the sauce in a skillet. Simmer for an additional 5-10 minutes.
- Garnish with fresh herbs before serving.
Notes
For a lighter version, ground chicken or plant-based meat can be used. Pair with rice or serve as an appetizer.
