These flavorful roll-ups combine vibrant spinach, creamy ricotta, and a rich marinara sauce for a comforting meal that’s perfect for any gathering.


Ingredients

  • Fresh lasagna noodles (or oven-ready)
  • 15 oz ricotta cheese
  • 2 cups fresh spinach
  • 1 cup mozzarella cheese (shredded)
  • ½ cup Parmesan cheese (grated)
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cloves garlic (freshly minced)
  • 1 tablespoon fresh basil (chopped)
  • ¼ teaspoon nutmeg
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Filling: In a sauté pan, heat olive oil over medium heat. Add minced garlic and cook until fragrant. Stir in the fresh spinach until wilted. In a bowl, combine ricotta, 1 cup of mozzarella, half of the Parmesan, sautéed spinach, chopped basil, nutmeg, salt, and pepper. Mix well.
  2. Boil the Lasagna Noodles: Cook the lasagna noodles according to the package directions until al dente. Lay them out flat on a clean surface to cool slightly.
  3. Assemble the Roll-ups: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish. Place a heaping spoonful of the ricotta-spinach mixture on one end of each lasagna noodle. Roll it up gently, then place seam-side down into the dish. Repeat until all noodles are filled.
  4. Top with Sauce and Cheese: Pour the remaining marinara sauce over the roll-ups, ensuring they are well-coated. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  5. Bake: Cover the dish with foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  6. Serving: Let it cool for a few minutes. Garnish with fresh basil before serving.

Notes

Let the roll-ups rest after baking for easier serving. Adjust seasoning to taste.
