- 4 cups chicken stock
- 2 chicken thighs
- 2 tablespoons soy sauce
- 1 tablespoon miso paste

- Scallions, bok choy, and mushrooms (to taste)
- Soft-boiled eggs, seaweed, and sesame seeds (for topping)
Instructions
- Heat a pot over medium heat and add a splash of oil. Sauté minced garlic and ginger until fragrant.
- Add in the chicken thighs and sear until golden brown.
- Pour in the chicken stock, soy sauce, and miso paste; allow it to simmer.
- Incorporate your choice of vegetables, such as bok choy and shiitake mushrooms.
- Meanwhile, cook the ramen noodles according to package instructions, drain, and set aside.
- Once the chicken is cooked through, remove and shred it, then return it to the broth.
- Stir in chili oil to your preferred spice level and adjust seasoning. Serve the broth over ramen and top with your favorites.
Notes
For a vegetarian version, swap chicken for tofu. Be cautious with salt as soy sauce contains sodium.
