Description

A comforting bowl of Easy Spicy Chicken Ramen filled with rich flavors from chicken broth, spicy chili oil, and fresh vegetables.


Ingredients

  • Fresh or dried ramen noodles
  • 4 cups chicken stock
  • 2 chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 12 tablespoons chili oil (adjust to taste)
  • Scallions, bok choy, and mushrooms (to taste)
  • Soft-boiled eggs, seaweed, and sesame seeds (for topping)

Instructions

  1. Heat a pot over medium heat and add a splash of oil. Sauté minced garlic and ginger until fragrant.
  2. Add in the chicken thighs and sear until golden brown.
  3. Pour in the chicken stock, soy sauce, and miso paste; allow it to simmer.
  4. Incorporate your choice of vegetables, such as bok choy and shiitake mushrooms.
  5. Meanwhile, cook the ramen noodles according to package instructions, drain, and set aside.
  6. Once the chicken is cooked through, remove and shred it, then return it to the broth.
  7. Stir in chili oil to your preferred spice level and adjust seasoning. Serve the broth over ramen and top with your favorites.

Notes

For a vegetarian version, swap chicken for tofu. Be cautious with salt as soy sauce contains sodium.
