Ingredients
- Boneless, skinless chicken breasts or thighs
- Salt and freshly ground black pepper
- All-purpose flour (optional)
- Unsalted butter
- Olive oil
- Fresh garlic (minced)
- Mushrooms (cremini, shiitake, or button)
- Chicken stock or white wine
- Lemon juice
- Fresh herbs (parsley, thyme, or rosemary)
- Optional add-ins: splash of cream, spinach, red pepper flakes
Instructions
- Pat the chicken dry with paper towels; season both sides with salt and pepper. If thick, halve or pound for even cooking. Dust with flour if desired.
- Heat a large skillet over medium-high heat, add olive oil and butter. When shimmering, add the chicken.
- Sear the chicken without moving until golden brown, about 4-5 minutes per side. Flip only once.
- Remove chicken and set aside. Reduce heat; add more butter and sauté mushrooms until browned.
- Add minced garlic and cook until fragrant, about 30-60 seconds. Deglaze the pan with wine or stock.
- Stir in lemon juice and cream if using. Return chicken to skillet and simmer gently for 3-5 minutes until cooked through.
- Finish with chopped parsley and thyme. Taste and adjust seasoning. Serve immediately with sauce and mushrooms over chicken.
Notes
Use a meat thermometer to ensure chicken reaches 165°F (74°C). Rest chicken after cooking for juicier results.
