Description

A comforting dish of silky noodles enveloped in a rich, creamy peanut sauce, garnished with fresh herbs and sesame seeds.


Ingredients

  • 8 oz long noodles (wheat, rice, or gluten-free)
  • 1/2 cup natural peanut butter
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • Fresh cilantro, for garnish
  • Sliced scallions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, garlic, ginger, sugar, and vinegar until smooth.
  3. Toss the cooled noodles with the peanut sauce until evenly coated.
  4. Add fresh cilantro, scallions, and sesame seeds; toss to combine.
  5. Serve cold or at room temperature. Enjoy!

Notes

For extra flavor, sauté vegetables like bell peppers or snap peas and toss them in. Feel free to substitute with almond or sunflower seed butter for nut-free options.
