- 1 lb Brussels sprouts, trimmed and halved
- 3 tbsp olive oil
- Zest and juice of 1 fresh lemon
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prep the Brussels sprouts by trimming the ends and slicing them in half.
- Toss the sprouts in a large bowl with olive oil, salt, and pepper.
- Spread them in a single layer on a baking sheet, cut side down.
- Roast for about 20-25 minutes until golden brown and crispy.
- In the last five minutes, sprinkle freshly grated parmesan over the sprouts.
- Finish with a squeeze of lemon juice and zest before serving.
Notes
For added flavor, consider stirring the sprouts halfway through roasting. Optionally, add minced garlic or toasted pine nuts for extra crunch.
