A warm, comforting skillet cookie that combines pumpkin, chocolate, and cozy autumn spices for a delightful treat.
Ingredients
Scale
- 1 cup pumpkin puree
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the pumpkin puree, followed by the egg and vanilla extract, until combined.
- In another bowl, whisk together the flour, baking soda, spices, and salt, then gradually add this dry mixture to your wet ingredients.
- Stir until just combined; avoid overmixing!
- Gently fold in the chocolate chips.
- Grease a cast-iron skillet or baking dish with butter or cooking spray. Pour the batter into the skillet and spread it evenly.
- Bake for 25-30 minutes, or until the edges are lightly browned and a toothpick inserted comes out with a few moist crumbs.
- Let cool slightly, then slice and serve warm.
Notes
Consider adding chopped nuts or caramel for extra flavor. Keep an eye on the cookie as it bakes; the edges should be golden brown.
