Ingredients

  • 1 tsp Salt
  • 2 Eggs (optional for richness)
  • 2 tbsp Butter or Olive oil for sautéing
  • Fresh herbs (such as chives or parsley) for garnish (optional)

Instructions

  1. Prepare the Potatoes: Boil your potatoes until fork-tender, about 15-20 minutes. Allow to cool slightly before peeling.
  2. Mash the Potatoes: In a large bowl, mash the warm potatoes until smooth.
  3. Combine Ingredients: Gradually mix in flour and salt. If using eggs, beat them beforehand and mix in.
  4. Knead the Dough: Knead gently on a floured surface until a soft dough forms.
  5. Roll Out the Dough: Divide dough and roll each portion into thin sheets (about 1/8 inch thick).
  6. Cut into Noodles: Slice dough into desired noodle shape with a knife or pizza cutter.
  7. Cook the Noodles: Boil salted water, add noodles, and cook until they float (1-2 minutes). Drain and toss with butter or olive oil.

Notes

For extra flavor, sauté mushrooms or vegetables to add just before serving.
