Description

A quick and versatile dish that allows you to create personal pita pizzas with your choice of toppings, perfect for family dinners or gatherings.


Ingredients

  • 2 whole wheat or white pita bread
  • 23 tablespoons tomato sauce
  • 8 oz fresh mozzarella, torn or sliced
  • 1 cup sautéed mushrooms (cremini or button)
  • Thinly sliced red onion, to taste
  • Bell peppers, to taste
  • Pepperoni, olives, or arugula, to taste
  • 1 tablespoon olive oil
  • 1 knob of butter (optional)
  • 1 garlic clove, minced (fresh or dried)
  • Fresh basil and oregano, to taste
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C) or heat a heavy skillet over medium-high heat.
  2. If using whole pita pockets, split them gently to create two thin rounds; otherwise, lay flat pitas on a baking sheet or in a skillet.
  3. Brush each pita lightly with olive oil; then, spread 2–3 tablespoons of tomato sauce in a thin layer.
  4. Tear or slice mozzarella and scatter evenly. Add your chosen toppings—sautéed mushrooms for savory depth, and fresh basil or arugula for brightness.
  5. Season with salt and pepper, and drizzle with a little extra-virgin olive oil or a tiny dab of butter for extra flavor.
  6. If using an oven: bake on a preheated sheet or pizza stone for 6–8 minutes until the edges brown and cheese bubbles. If using a skillet: cover and cook for 4–6 minutes until the cheese melts, briefly broiling for a blistered top if desired.
  7. Remove from heat, finish with fresh herbs, then slice and serve immediately.

Notes

For a crisp bottom, preheat the baking sheet or pizza stone and use less sauce to avoid sogginess. Experiment with various toppings for creative variations.
