- 2 1/4 cups all-purpose flour (or up to 1/2 cup whole-wheat pastry flour)
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt, plus flaky salt for finishing
- 1 cup unsalted butter (preferably browned)
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs at room temperature
- 2 teaspoons pure vanilla extract
- 1 1/2 cups chocolate chunks (mix dark and milk)
- 1 cup crushed millionaire toffee bits or chopped English toffee candy
Instructions
- Brown the butter in a light-colored skillet over medium heat, swirling often, until brown solids appear and it smells nutty. Let cool slightly.
- Whisk flour, baking soda, and salt in a bowl.
- Combine sugars and browned butter in a large bowl and beat until combined.
- Add eggs one at a time, mixing well, then stir in vanilla.
- Gradually fold in dry ingredients until you see a soft dough.
- Fold in chocolate chunks and toffee bits by hand.
- Scoop dough onto parchment-lined baking sheets, leaving ample room for spread.
- Bake at 350°F (175°C) for 10–12 minutes or until edges are golden and centers are set but still soft.
- Remove cookies to a wire rack and sprinkle with flaky salt while still warm.
- For thicker cookies, chill dough for at least 30 minutes before baking.
Notes
Use a cookie scoop for uniform sizes. Rotate pans halfway through baking for even browning.
