  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 can black beans (optional)
  • 1 cup corn (optional)
  • 1 cup quinoa (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the peppers and remove the seeds.
  3. In a large skillet, heat olive oil over medium heat and sauté diced onions until translucent.
  4. Add minced garlic and cook until fragrant.
  5. Incorporate ground meat, seasoning with cumin, chili powder, salt, and pepper, cooking until browned.
  6. Mix in optional vegetables and half of the cheese, stir until combined.
  7. Stuff each pepper with the mixture and place them upright in a baking dish.
  8. Cover with foil and bake for 25-30 minutes. Remove foil, sprinkle with remaining cheese, and bake for an additional 10 minutes.
  9. Garnish with fresh cilantro or chopped green onions before serving.
