- 4 bell peppers (orange, green, or yellow)
- 1 lb ground beef or turkey (or plant-based alternative)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 can black beans (optional)
- 1 cup corn (optional)
- 1 cup quinoa (optional)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the peppers and remove the seeds.
- In a large skillet, heat olive oil over medium heat and sauté diced onions until translucent.
- Add minced garlic and cook until fragrant.
- Incorporate ground meat, seasoning with cumin, chili powder, salt, and pepper, cooking until browned.
- Mix in optional vegetables and half of the cheese, stir until combined.
- Stuff each pepper with the mixture and place them upright in a baking dish.
- Cover with foil and bake for 25-30 minutes. Remove foil, sprinkle with remaining cheese, and bake for an additional 10 minutes.
- Garnish with fresh cilantro or chopped green onions before serving.
Notes
