Ingredients

  • 2 medium zucchini, sliced into half-moons
  • 4 cups fresh spinach
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian herbs (basil, oregano, thyme)
  • 1 tbsp olive oil
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Prepare Ingredients: Chop the onion and mince the garlic. Slice the zucchini and rinse the spinach.
  2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion, sauté until translucent, about 5-7 minutes. Stir in garlic for the last minute.
  3. Cook the Turkey: Increase heat to medium-high, add ground turkey, and cook until browned, about 8-10 minutes. Season with salt, pepper, and Italian herbs.
  4. Add Vegetables: Lower heat and add zucchini, cooking for an additional 5 minutes. Fold in spinach and stir until wilted.
  5. Finish and Serve: Sprinkle with Parmesan cheese if desired and serve warm with crusty bread or whole grains.

Notes

Don’t overcrowd the pan for better browning. Adjust seasoning as needed. Freezes well for up to three months.
