Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter with the sugar until light and fluffy, about 3 to 5 minutes.
- Beat in the egg and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture, beating on low speed until just combined.
- Chill the dough in the refrigerator for at least an hour.
- Roll out the dough on a floured surface and cut into desired shapes.
- Place on a baking sheet lined with parchment paper and bake for 8-10 minutes or until edges are lightly golden.
- Let cool completely before frosting.
- For icing, whisk together powdered sugar, milk, and a splash of vanilla, then divide and tint with food coloring for decoration.
- Allow the icing to set before enjoying or packaging to share.
Notes
Ensure cookies are completely cool before adding icing to avoid melting. You can freeze undecorated cookies for up to three months.
