A comforting and nostalgic homemade cream of chicken soup that’s simple to prepare and full of flavor.
Ingredients

- 2 cups cooked chicken (breast or thighs)
- 2 tablespoons unsalted butter
- 1 cup onion, diced
- 1 cup celery, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: 1 cup mushrooms, diced; 1 cup carrots, diced; or 1 cup peas
Instructions
- Melt butter in a large pot over medium heat. Add diced onion and celery, cooking until softened, about 5 minutes.
- Add minced garlic and diced chicken. Cook until chicken is no longer pink, stirring occasionally.
- Pour in the chicken broth, scraping browned bits from the pot, and bring to a simmer.
- Add heavy cream, thyme, salt, and pepper; taste and adjust seasonings. Optionally add any mushrooms or vegetables.
- Allow to simmer on low for about 15-20 minutes, then serve hot with bread.
Notes
For added creaminess, blend part of the soup and mix it back in. Use rotisserie chicken for a quicker meal or vegetable broth for a vegetarian version.
