A comforting homemade chicken soup filled with fresh vegetables and aromatic herbs, perfect for chilly days.
Ingredients

- 1 whole chicken or chicken thighs
- 8 cups chicken broth or water
- 2 cups chopped carrots
- 2 cups chopped celery
- 1 cup chopped onions
- 2 tablespoons fresh thyme
- 1/4 cup fresh parsley
- 2 bay leaves
- Salt and pepper to taste
- Squeeze of lemon juice (optional)
Instructions
- Rinse the chicken under cold water and pat it dry. Place it in a large stockpot and cover with water or broth. Bring to a gentle boil and skim off any foam.
- In a separate pan, heat olive oil and sauté chopped onions, carrots, and celery until soft and fragrant.
- Transfer the sautéed veggies to the pot with the chicken and add the herbs. Let simmer for about 30 minutes or until the chicken is cooked through.
- Remove the chicken, let cool, shred it, and return it to the pot.
- Taste and season with salt, pepper, and additional herbs as desired. Add lemon juice before serving.
- Ladle the soup into bowls, garnish with fresh parsley, and serve hot with crusty bread.
Notes
Feel free to substitute veggies based on what you have on hand. Rotisserie chicken can also be used for time-saving.
