- 1 whole chicken or chicken thighs
- 8 cups chicken broth
- 3 cups egg noodles (or gluten-free option)
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon fresh thyme
- 1 teaspoon fresh parsley
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Prep the ingredients: Chop vegetables uniformly. If using a whole chicken, cut it into pieces.
- Sauté the aromatics: Heat olive oil in a large pot and sauté onions until translucent. Add carrots, celery, and garlic, and stir for 2-3 minutes.
- Add the chicken: Place chicken pieces and enough broth to cover in the pot. Add herbs and seasonings. Bring to boil, then reduce to a simmer.
- Simmer and skim: Let simmer for 30-40 minutes, skimming foam.
- Cook the noodles: Remove chicken, stir in noodles, and cook until tender, about 10 minutes. Shred chicken into bite-sized pieces.
- Combine and season: Add shredded chicken back, adjust seasoning, adding lemon juice if desired.
- Serve warm: Ladle soup into bowls, garnish with fresh parsley.
Notes
For best results, cook noodles separately if making in advance to maintain texture.
