  • 1 teaspoon fresh parsley

  • 1 tablespoon olive oil

Instructions

  1. Prep the ingredients: Chop vegetables uniformly. If using a whole chicken, cut it into pieces.
  2. Sauté the aromatics: Heat olive oil in a large pot and sauté onions until translucent. Add carrots, celery, and garlic, and stir for 2-3 minutes.
  3. Add the chicken: Place chicken pieces and enough broth to cover in the pot. Add herbs and seasonings. Bring to boil, then reduce to a simmer.
  4. Simmer and skim: Let simmer for 30-40 minutes, skimming foam.
  5. Cook the noodles: Remove chicken, stir in noodles, and cook until tender, about 10 minutes. Shred chicken into bite-sized pieces.
  6. Combine and season: Add shredded chicken back, adjust seasoning, adding lemon juice if desired.
