Description
Delicious hand pies filled with sweet and tart spiced apples encased in a flaky crust, perfect for autumn gatherings.
Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 2–3 cups fresh apples, peeled and sliced (a mix of Granny Smith and Honeycrisp)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- Ice water
Instructions
- Prepare the crust: Mix flour and salt, cut in butter until crumbly, add ice water, form into a disk and refrigerate for 1 hour.
- Make the filling: Toss sliced apples with sugars, cinnamon, nutmeg, lemon juice, and salt; let sit for 15 minutes.
- Roll out the dough: Roll to 1/8-inch thickness and cut into 5–6 inch circles.
- Assemble the hand pies: Place filling on each circle, fold and seal edges, make slits on top, and brush with egg wash.
- Bake: Preheat oven to 375°F (190°C), bake for 25-30 minutes until golden brown.
- Cool and serve: Let pies cool slightly before serving.
Notes
For a vegan option, substitute butter with coconut oil or vegan butter. Diced pears or mixed berries can also be used in place of apples.
