Description

A comforting and hearty bean soup made with ham bone, perfect for colder months and family gatherings.

Ingredients

Scale
  • 1 Ham Bone
  • 1 cup Pinto Beans
  • 1 cup Navy Beans
  • 1 medium Onion, diced
  • 2 Carrots, diced
  • 2 Celery Stalks, diced
  • 2 cloves Garlic, minced
  • 6 cups Chicken Broth
  • 1 teaspoon Fresh Thyme
  • 2 Bay Leaves
  • Salt and Black Pepper, to taste
  • Fresh Parsley, for garnish
  • Olive Oil, for sautéing

Instructions

  1. Prepare the Beans: If using dried beans, soak them overnight. Rinse before adding to the soup.
  2. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until softened, about 5–7 minutes. Add garlic for the last minute.
  3. Add the Ham Bone and Broth: Place the ham bone into the pot, covering it generously with broth. Bring to a boil, then reduce to a simmer.
  4. Incorporate the Beans: After the broth has simmered for about 30 minutes, add soaked and drained beans. These will take about an hour to become tender.
  5. Season: Add thyme, bay leaves, black pepper, and any other desired spices. Adjust seasoning as needed.
  6. Finishing Touches: Once the beans are soft, remove the ham bone, and shred any remaining meat into the soup. Discard the bone and bay leaves.
  7. Serve: Ladle the soup into bowls and garnish with chopped parsley. Enjoy with crusty bread.

Notes

For added flavor, consider a splash of cider vinegar just before serving. The soup tastes even better the next day.
