- 1 Ham Bone
- 1 cup Pinto Beans
- 1 cup Navy Beans
- 1 medium Onion, diced
- 2 Carrots, diced
- 2 Celery Stalks, diced
- 2 cloves Garlic, minced
- 6 cups Chicken Broth
- 1 teaspoon Fresh Thyme
- 2 Bay Leaves
- Salt and Black Pepper, to taste
- Fresh Parsley, for garnish
- Olive Oil, for sautéing
Instructions
- Prepare the Beans: If using dried beans, soak them overnight. Rinse before adding to the soup.
- Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until softened, about 5–7 minutes. Add garlic for the last minute.
- Add the Ham Bone and Broth: Place the ham bone into the pot, covering it generously with broth. Bring to a boil, then reduce to a simmer.
- Incorporate the Beans: After the broth has simmered for about 30 minutes, add soaked and drained beans. These will take about an hour to become tender.
- Season: Add thyme, bay leaves, black pepper, and any other desired spices. Adjust seasoning as needed.
- Finishing Touches: Once the beans are soft, remove the ham bone, and shred any remaining meat into the soup. Discard the bone and bay leaves.
- Serve: Ladle the soup into bowls and garnish with chopped parsley. Enjoy with crusty bread.
Notes
For added flavor, consider a splash of cider vinegar just before serving. The soup tastes even better the next day.
